Frost at The Sebastian

Frost at The Sebastian brings warm feelings and a thoughtful approach to cocktails to one of Vail Village’s swankiest hotels. While the fake ice hanging around the bar and the name may seem a bit on the nose for a ski town bar, Frost offers a menu made with depth and knowledge. The cocktails are creative, the Scotch list plentiful, and there are a number of food options to keep you satiated while imbibing deep into the night.

Frost is lit a cool blue light and has stone floors. Wood bar stools with teal blue cushioned backs surround the bar, while a number of small tables are located throughout the space allowing for intimate conversation if desired. The space opens up into the hotel lobby, which features a number of roaring fireplaces. It’s the juxtaposition of these fire and ice elements that help give Frost its enchanting glow.

From 2pm to 6pm, Frost runs a separate apres ski menu and each day of the week comes with its own drink specials: Moscow Mules on Mondays, two for one Tuesdays, and so on. Food options range from bar snacks like mixed nuts and olives to pizzas, burgers, and desserts. There are also large share plates for those who come in famished with a large crowd post a day on the mountain.

While everything at Frost is top quality, it’s the cocktail menu that truly shines. There are four pages worth of specially handcrafted beverages that play to the menu creator’s refined knowledge of mixed drinks. From reinventions like the Valoma–a sexy and clever play on the traditional Paloma–to classics like Corpse Reviver #2 and a Vesper, it’s clear that thought and time were put into the cocktail list. For those not looking for a mixed drink, there are a number of beers on draft as well as by the bottle and a sizeable by-the-glass wine list. Frost’s whisky menu, meanwhile, is one of the best in Vail. While it is definitely geared toward Scotch lovers, there are plenty of Bourbon and American Whiskey options that should keep any brown liquor lover happy.

Frost at The Sebastian is warm and thoughtful. The drinks are creative and the whisky menu is impressive. While nothing here comes cheap, the quality is high and the service is impeccable.
