Louisville’s Rabbit Hole Distillery has announced the release of Regallier, a limited-edition bourbon that marries Kentucky tradition with French elegance. Launching this September—just in time for Bourbon Heritage Month—the 118.9-proof expression will be available exclusively at the distillery.
Rabbit Hole Regallier: A Marriage of American and French Oak
At its heart, Regallier is a high-rye, double-malt bourbon that undergoes a dual maturation journey. First aged in new American oak, the spirit is then transferred to French oak casks, a process that layers bold Kentucky character with refined European nuance.
The result is a whiskey that opens with notes of bright citrus, vanilla, and toffee, evolving into flavors of Bing cherry, toasted almond, and sandalwood. The finish is described by the distillery as “smooth and creamy,” marked by sweet plum, dried fruits, and a touch of cocoa.
This combination underscores Rabbit Hole’s reputation for blending traditional craftsmanship with experimental flair, pushing the category in new directions without losing sight of bourbon’s roots.
A Distillery Built on Innovation
Founded by Kaveh Zamanian, Rabbit Hole has carved out a place among Kentucky’s new generation of whiskey makers by doing things differently. Each expression begins with unique grain recipes, often highlighting malted grains in ways not typically seen in American whiskey.
Barrels are toasted and charred to maximize complexity, and whiskey enters at a lower proof than industry standard, preserving delicate flavors through maturation. True to the small-batch ethos, each harvest is drawn from no more than 15 barrels.

For those eager to experience Regallier, the release is limited to the Rabbit Hole Distillery throughout the month of September. Visitors can explore the new bourbon alongside the distillery’s acclaimed range of whiskeys through the “Find Your Perfect Whiskey” experience, a guided tasting designed to match drinkers with their ideal expression.
Adding to the celebration, Rabbit Hole’s Overlook Bar will extend its hours on Fridays and Saturdays through October 24th, offering handcrafted cocktails and whiskey flights overlooking Louisville’s skyline.

Regallier joins a portfolio that already includes a mix of Kentucky Straight Bourbon and Rye Whiskeys, each designed to highlight the distillery’s unconventional approach.
