The latest chapter in London’s most refined non-alcoholic cocktail collaboration has arrived: Everleaf, the British brand known for its deeply botanical, non-alcoholic apéritifs, has released a new limited-edition canned serve—the Bergamot, Mint + Lemon Verbena Highball—in partnership with award-winning bar Tayēr + Elementary.
This 250ml ready-to-drink (RTD) cocktail is the third and final installment in a slow-blooming trilogy of inventive, alcohol-free highballs. It draws on Everleaf Marine, the brand’s seaweed- and coastal plant-inspired expression, to deliver what’s being called a crisp, saline refresher. Picture bergamot’s citrus brightness, mint’s cooling lift, and lemon verbena’s floral-green notes, all tethered by Marine’s umami tidepool depth. It’s the kind of drink that doesn’t need alcohol to feel grown-up—and doesn’t try too hard to convince you it’s missing something.
The flavor profile, according to Everleaf founder and conservation biologist Paul Mathew, is “fresh, coastal and complex.” He created the highball alongside Tayēr + Elementary’s founders, the internationally celebrated bartending duo Alex Kratena and Monica Berg, both long-time champions of Everleaf’s botanical-forward line.
“This third can completes the set,” Mathew said. “Each one has been an opportunity to explore a different part of the Everleaf flavour world, and this one with Marine feels like the perfect summer refresh… We can’t wait for people to try it, at Elementary, or with a plate of oysters overlooking the sea somewhere.”
Previous limited releases in the series include the Blood Orange + Timur Pepper Highball, crafted with Everleaf Forest, and the Jasmine + Lily Highball made with the Mountain expression—both of which sold out quickly and helped reframe the possibilities of sophisticated, alcohol-free drinking.
The new highball clocks in at 0% ABV and is designed to be enjoyed solo, over ice, or even lengthened with a splash of gin or vodka for those who want it both ways.
