Milk & Honey Classic Single Malt Whisky

Milk & Honey is Israel’s first whisky distillery and while they’ve made a number of whiskies and other spirits, it’s their Classic Single Malt Whisky that has gotten the crowds salivating. Turns out, it’s the first commercial single malt whisky by Milk & Honey, but whether it’s beginners luck or just a knack for crafting delicious spirits, this Whisky is quickly becoming a global favorite.

Milk & Honey ages their Classic Single Malt in ex-bourbon and red-wine shaved, toasted, and re-charred (STR) casks. It’s matured under the heat of the Tel Aviv sun, where it becomes its well-balanced self and features flavors unique to its terroir.

On the nose, the Classic Single Malt presents aromas of gentle vanilla sweetness followed by light oak and floral notes. The palate is light in body with vanilla, carama, and honest sweetness, balanced by wood and black pepper. The finish is short, yet elegant with lingering notes of oak and a light spiciness. 

Founded in 2012, Milk & Honey is an urban distillery located in an up and coming Tel Aviv neighborhood. Due to Israel’s 300 days of sunshine per year and high temperatures, the brand uses hot climate maturation. The method allows the whisky to age rapidly, without destroying the quality of the spirits in the cask. The landscape’s unique terroir can be experienced through the spirit. By 2021 the distillery will be producing and selling over a quarter of a million bottles around the world.

Next up, Milk & Honey plan to release an Elements Series, which will present different characters of single malt from Tel Aviv in different bottlings. A sherry cask finish will be released at some time in the second quarter of 2020, later followed by a lightly peated whisky, and then a single malt with a red wine cask finish.
